The simplicity of the ingredients, paired up with the flavor and texture of these brownies is really something to write home about. Brownie lovers usually fall into two categories: the ones who like cakey brownies, and the ones who like dense and fudgy brownies. Not to worry, this recipe will satisfy both! If you like cakey brownies, enjoy warm or as fresh as possible. If you like dense and fudgy brownies, chill overnight. However, please eat these with an open mind. They will never be as cakey, or as dense/fudgy as the traditional brownies, but they are probably as close as you can get.

Paleo and Dairy-Free Strawberry Cheesecake
This cheesecake will seriously blow your mind. Not only is it grain- and gluten-free, it is also dairy- and refined sugar-free. To top things off, this cheesecake actually tastes as good as, if not better than the “traditional” dairy-, sugar-, grain-laden version. It’s dreamy, creamy, smooth, dense and comes with that trademark tang that so many paleo and dairy-free cheesecakes miss. To me, this recipe is the find of the century!

Paleo Apple Crumble (gluten-, dairy-, refined sugar-free)
Apple crumble used to be one of my favorite desserts. I could never decide if it was better with custard or vanilla ice cream. Funny how I don’t eat any of these foods made the “traditional” way anymore.

I cannot believe that these brownies are gluten-free, grain-free, dairy-free, soy-free, refined sugar-free and flour-free! If it’s a squidgy brownie you’re looking for, I’m sorry, this isn’t the recipe you’re looking for. But if you’re looking for a moist- and cakey-type brownie, this is it. Strawberry Cream Vanilla Sandwich Cake made with Coconut Flour (gluten-, dairy-, soy-, refined sugar-free)
I’ve been thinking about a Victoria sandwich for so long, it’s ridiculous. The problem is that I had to devise one that was gluten-, dairy- and refined sugar-free. Thankfully, this cake comes to the rescue. Although it’s nothing like the light and buttery Victoria sandwich, it’s still awesome, and I enjoyed it for my birthday.
Two super-moist vanilla sponge cakes are sandwiched together with fruit-sweetened strawberry jam and coconut whipped cream. Sliced fresh strawberries were then used to adorn the cake in all its glory. If you’d like you could also use a glaze to make it look even fancier.

Cauliflower Cous Cous (gluten-free)
This is a grain-free cous cous, that is actually really good for you. It’s a great way of sneaking cauliflower into our diets, and we all know we should be eating more cruciferous vegetables! It’s simple, it’s easy, and you can dress it up as little, or as much as you want. Here, I dressed it up with tomatoes, olives, parsley, garlic and olive oil, and served it with pan-fried mackerel stuffed with orange and almond meal. It was darn good!
