This cheesecake will seriously blow your mind. Not only is it grain- and gluten-free, it is also dairy- and refined sugar-free. To top things off, this cheesecake actually tastes as good as, if not better than the “traditional” dairy-, sugar-, grain-laden version. It’s dreamy, creamy, smooth, dense and comes with that trademark tang that so many paleo and dairy-free cheesecakes miss. To me, this recipe is the find of the century!

Paleo Coconut Bread / Cake (gluten-, dairy-, refined sugar-free)

This bread is unbelievable! It’s gluten-, dairy-, refined sugar-free and suitable for those on the paleo diet. The texture is similar to that of a dense/heavy sponge/pound cake, but it holds well enough to make sandwiches, if you’re that way inclined (i.e. me). You can make it into a sweeter “cake” by adding honey, or omit the honey and vanilla for a savory sandwich type bread.

This bread slices well, is moist and incredibly moreish. I enjoyed this bread with big dollops of fruit-sweetened peach jam. Continue reading

Coconut Milk Chocolate Ice Cream

This incredibly rich, creamy and chocolaty ice cream is vegan, dairy-, egg- and refined sugar-free. It is also made with simple ingredients: coconut milk, honey, cocoa powder, vanilla powder and sea salt.

I made this ice cream a few times throughout the summer. I had a few cans of coconut milk in the fridge to make whipped coconut cream, but unfortunately they flunked out on me, so I created this ice cream instead. It is such an awesome treat. Continue reading

Strawberry Cream Vanilla Sandwich Cake made with Coconut Flour (gluten-, dairy-, soy-, refined sugar-free)

I’ve been thinking about a Victoria sandwich for so long, it’s ridiculous. The problem is that I had to devise one that was gluten-, dairy- and refined sugar-free. Thankfully, this cake comes to the rescue. Although it’s nothing like the light and buttery Victoria sandwich, it’s still awesome, and I enjoyed it for my birthday.

Two super-moist vanilla sponge cakes are sandwiched together with fruit-sweetened strawberry jam and coconut whipped cream. Sliced fresh strawberries were then used to adorn the cake in all its glory. If you’d like you could also use a glaze to make it look even fancier.

What this cake isn’t free from is flavor and texture. It is wonderfully moist, chocolaty and incredibly moreish. It was one of my birthday cakes this year. Yeah, I know, it’s 3 months ago, but still. This cake is also known as a chocolate roulade or Swiss roll. Whatever we decide to call it, it’s bloody good! What makes it even better is that it’s gluten-free, dairy-free, refined sugar-free and gum-free!

I hadn’t eaten cake for months, and this was incredibly delicious. I couldn’t stop at one piece… I had 1/8 th, then I had another 1/8 th, then another 1/8 th, and when A wasn’t looking, I had another 1/8 th. Ermm… yes, this was in one day! These cookies are delicious. These cookies are chewy. These cookies are chocolaty. These cookies are perfect.

These cookies did not make me itch, bloat, constipate, or cause a sugar rush/crash, or more important, they did not cause a immune response cascade. These cookies are simply divine. I am not exaggerating… ok, I might be, since these are the first cookies I’ve had for over a year since going gluten free. Seriously, anyone who cannot eat gluten, dairy, gum, soy, or refined sugar and is missing really good chewy cookies need to try these. Continue reading

Vegan Coconut Fudge

Coconut bliss in one bite. This fudge is creamy, barely sweet and packed full of coconutty goodness. It’s nutritious, dairy- and refined sugar-free and made from just 5 ingredients: coconut, coconut oil, dates, vanilla and salt. The pieces can be dipped in chocolate if desired. For me, they didn’t get that far… they went straight into my stummy.

A couple of tips: use a freshly opened package of coconut and the plumpest Medjool dates you can find. I like using these.

Warning: these are pretty addictive. I ate one piece after another, and then returned to the refrigerator to get another piece. Eventually, I just took the whole container and sat down. Continue reading

Homemade Almond Milk (vegan)

I’ve been using almond milk since I went dairy- and soy-free. I don’t drink it by the glass, but rather put it in smoothies or in my porridge/oatmeal. There are two problems with store-bought almond milk: (i) most are made from conventional almonds, and (ii) all contain some sort of gum that I’m allergic to. Fortunately, I’m not allergic to carrageenan, but I do not like what I read about this stuff, so I wanted to find a healthier alternative.

Homemade almond milk is so easy to make, and best of all, if you like it sweetened, you can sweeten it with your chosen sweetener. If you’d like to add other flavorings such as cocoa or vanilla, you can also do that. But best of all, there are no weird ingredients in it. Continue reading

Vegan Apple Tart (gluten-, refined sugar- and gum-free)

Wow. Just, wow.

The flavor and texture of this apple tart will make you sing and dance. What’s best is that it contains no gluten, no refined sugar and no xanthan/guar gum. It’s plant based, delicious and does not contain a myriad of weird flours that you’ve never heard of. The ingredients are clean, simple and nutritious. The pastry/crust is made from blitzing together millet flour, almond flour, coconut oil and salt, and the filling is made from sliced apples, lemon juice, maple syrup, flaked/sliced almonds, glazed with fruit-sweetened jam/preserves/fruit spread. Meatless Lasagna (dairy- and gluten-free)

Wow a vegan lasagna that tastes as good, if not better than the meat-laden version? Yep. Before anyone says anything, my version of lasagna is typically different than what most Americans would see as lasagna. That is, lasagna made with layers of ricotta and other stuff. My lasagna is more typical of the British style made lasagna, that is red sauce layered with lasagna sheets (noodles) and then topped with a white sauce and cheese (for the dairy eaters).
