This smoothie is creamy and super-rich. It’s exactly what I wanted, however, it was so rich that it nearly made me sick. In small doses, it’s really good, but I wouldn’t recommend drinking the full serving. Would I make it again? Probably not, but it was worth a try. The moral of this story: be careful what you wish for.
AVOCADO AND COCONUT MILK SMOOTHIE (DAIRY-, REFINED SUGAR-FREE)
- 1/2 ripe, medium-sized hass avocado
- 120 ml (1/2 c) full-fat coconut milk, or more, as needed
- 1-2 handful ice cubes
- 2-3 tablespoons maple syrup, or to taste
1. Blend all the ingredients together until smooth. Add more coconut milk to thin, and more maple syrup to sweeten, if necessary. Enjoy!
