Dark Chocolate Rice Krispies Treats with Marshmallows

As kids, we used to make chocolate rice krispies treats. We used to love them. However, at that moment in time, we had no idea what was good and what was not. We used melt milk chocolate flavored cake covering, known as Scotbloc, and mix it with rice krispies (or broken up shredded wheat cereal).  The thought of milk chocolate flavored cake covering now makes me shudder.

Even with better ingredients: organic dark chocolate, I avoid these treats because of the sugar, however, they are usually well received by everyone else*… they are also a great way of using up lots of the dark/bitter-sweet chocolate we have, and boxes of chocolate rice krispies that I acquired during my gluten-free cereal kick.

The mini marshmallows give these treats a chewy and sweet dimension to the crunchy texture and dark chocolaty flavor.

*except most {younger} kids; milk chocolate can be substituted for dark


makes one 23 x 33 cm/9 x 13 inch dish


  • 235 g (8.25 oz) dark/bitter-sweet chocolate, broken into chunks and melted
  • 30 g (2 tablespoons) melted coconut oil or butter
  • 250 g (8.75 oz) puffed rice cereal
  • 100 g (3.5 oz) mini marshmallows
  • 1 pinch sea salt


1. Line one 23 x 33 cm/9 x 13 inch dish with greaseproof/waxed paper, or grease.

2. Mix all of the ingredients together until evenly coated.

3. Pour into the prepared dish and flatten with the back of a spoon. Chill until set.

4. Cut into squares and enjoy with a glass of milk or whatever you fancy.
